Sourdough feeds my soul

You know when you have one of those really tough days... Ok, you all know what I'm talking about. We're all having a few more of those days lately aren't we?! 
Like many of us do, we often turn to food to satisfy that longing that at times can only be filled by delicious, soul cleansing and totally comforting food. So today was one of those days for me... I gorged on waffles.
I think bread is the ultimate comfort food for most of the world. I mean, every culture has some type of bread accompaniment as a main staple in their diet. In Indian it's the Naan, Germany it's Rye loaves, Ethiopia is fermented Injera, Venezuela is Arepas, in Armenia it's Lavash, Montreal is bagels, Malaysia is the Roti, Turkey is the seed-crusted Simit, and the list goes on and on. And I bet you, all of these different cultures find their version of "bread" the ultimate comfort food. 
When I think of my own journey into the world of sourdough two things happened; I was searching for something to help me through a difficult season, and I was in desperate need of something comforting. God must have known me better than I knew myself because he gave me sourdough as a project and passion, and ultimately gave me the best comfort food in the world; bread. But not just any bread (as my quest to make the "closest-to-the-real-thing" gluten free version lead to prior to this), but real bread. And for that I'm forever grateful-that I can once again tolerate the best comfort foods in the world; through sourdough.
Now, I don't recommend stuffing yourself so full of waffles to the point of pain! It's just good to take comfort in the fact that there's a sourdough version of nearly everything out there that can fill the void when you need it most. 
And so let me now show you my sourdough versions of the foods I'm finding the most comfort in these days...
Let's start with the waffles:)
I finally got around to trying Ione's Sourdough Waffle recipe. You know the 86yr old Whitehorse woman whose sourdough starter dates back to 1896, with a piece now living in the sourdough library in Belgium? That recipe. Let's just say, she didn't skimp on the oil in this one! It's a light and crispy heavy weight (in your tummy).

Sourdough pancakes are the best! 
This is usually my go-to for the ultimate comforting and satisfying breakfast food. Cooked in a hot cast iron, it's hard to resist devouring the entire stack in one shot! 

Oh wait...it might be French toast actually. It's a toss up. 
Classic Sourdough drenched in Amish eggs & cashew milk with a hint of vanilla - topped with organic raspberries & blueberries, then a generous portion of Amish Maple Syrup. 

If you haven't guessed by now, breakfast is my favourite meal and ultimate comfort food. Likely because it includes (mostly) bread;)
Salmon Benedict on Rye and Smoked Salmon Goat cheese on Russian Rye Sourdough.

And how could I forget! Cinnamon buns...

Left: Homemade salami, tomato sauce and Manchego (sheep) cheese. 
Middle: Homemade BBQ sauce, organic chicken, olives and parmesan. 
Right: Homemade BBQ sauce, spinach, garlic and smoked goat cheese.

Dinner.
Organic chicken wings with Kale/Spinach Caesar salad. 
And bread & butter of course!

Yes, it's totally possible. Desserts are next level.
